Beef and Barley Soup

1 tablspn cooking oil
2 lbs beef short ribs
2 med onions, chopped
3 large carrots, sliced
3 celery ribs, sliced
1 can (28oz) whole tomatoes with liquid, chopped
2 qts water 4 chicken bouillion cubes
1/3 c medium pearl barley
1 tsp of oregano
In large dutch oven or kettle, heat oil and brown meat. Add onions, carrots, celery, tomatoes,  water, bouillion and oregano. Bring to a boil. Cover and simmer for about 2 hours until beef is tender. Add barley and cook  for another  hour until barley is tender.  This is also a great crockpot recipe, so add all ingredients, then walk off and leave it for 5 to 6 hours.
