Apricot and Apple Chutney

Ingredients:

1 cup (approx.) dried apricots, diced

1 small apple, peeled and diced

1 tbsp ripe mango, chopped (optional)

1 medium red onion, peeled and diced

1 tbsp fresh ginger, minced or grated (or 1 tsp ground ginger)

5 cardamom pods grounded (or 1 tsp ground cardamom)

¼ tsp salt

½ tsp cinnamon

1 tbsp apple cider vinegar

1 small green chilli, seeded and diced

½ cup brown sugar

 

Method:

1.      Soak dried apricots in just enough water (or orange juice) to cover fruit for at least an hour to soften.

2.      Heat apples, onions in saucepan or pot on low-to-medium heat until slightly softened.

3.      Add apricots (including soaking liquid) and remaining ingredients; bring up to simmer on medium heat; lower heat and simmer for 1 hour uncovered.

4.      Store in airtight, sterilized container in fridge.

 

Note:

  • I used a Pink Lady apple but if that’s too sweet for you, use a Granny Smith or some other green apple. You may also just add ½ cup apple juice instead.
  • I made-do with a pickled green jalapeño.
  • You may add all the ingredients together – just allow for extra cooking time.
