2 large sweet potatos 2 T light mayonaise 1 T dijon mustard 1/2 tsp salt 1/4 tsp coarsley ground black pepper 2 large celery stalk chopped 1/2 c thinly sliced red bell pepper 1/2 c chopped fresh pineapple 1/4 c toasted chopped pecans 1 small green onion thinly sliced
Using fork prick sweet potatoes several places microwave on high about 8 mins turning over midway thru. Cool until easy to handle and peel. Cut into 3/4 inch chunks. In large bowl mix mayonaise. mustard. salt and pepper until blended. Add all the remaining ingrediants. Toss gently until evenly coated. Sprinkle with chopped chives. Makes 4 cups.
