3 c flour 2 c sugar 1 tsp Baking Soda 1/2 tsp salt 1 tsp ground cinnamon 1 c chopped pecans 3 eggs beaten 1 c organic apple sauce 1 c cranola or vegetable oil 1 1/2 tsp vanilla 1 c crushed pineapple 2 c chopped bananas 8 oz light or fat free cream cheese softened 1/2 c butter or margarine softened 1 tsp vanilla extract
Stir and sift the first 5 ingrediants together, and add the chopped pecans. Set aside. In another bowl combine, eggs, apple sause, canola or oil, vanilla, pineapple and bananas. Stir them together by hand, NOT in a mixer, until well mixed. Do NOT beat. Fold liquid mixture into dry mixture until well mixed. Again, do NOT beat. Divide the batter into three 9 inch pans that have been greased and covered with a fine layer of bread crumbs. Bake in a 325 oven for 25-30 mins, or until set in center. Make sure you do not over bake. Cool Cakes, then ice them by by beating the last 4 ingrediants together.
