1 tablespoon Olive Oil
2 Salmon Fillets (fresh or frozen)
1 tablespoon Old Bay Seasoning
1/4 cup Robert Mondovi Chardonnay
1 tablespoon unsalted butter
Salt and Pepper to taste
Season both sides of the salmon fillets with Old Bay Seasoning. Heat
skillet over med-high heat for one minute. Add the Olive Oil and swirl
to coat pan. Add the seasoned fillets, and sear for one minute per side.
Add wine and butter, and swirl to coat all sides of salmon. Simmer for one minute
or until liquid has completely evaporated. Remove from heat, and season to taste
with salt and pepper. Serve immediately with a glass of the Robert Mondovi Wine.
Enjoy.
Serves 2.
