My step-mother worked for an Egyptian family for a while - this is a dish that she learned from them.

You will need - to feed a fair sized family:

2 large egg fruit

2 large green peppers

1lb ground beef

11/2 cups rice

6 large tomatoes      OR you can use 2 cans of tomato and onion mix

1 large onion             as above

plenty chopped garlic

2 teaspoons salt

Method:

Cut the tops off of the egg fruit and peppers and hollow them out. Then chop up the insides of these, finely. If you are using fresh tomato and onion, chop these up too. Mix all ingredients together and stuff the hollowed out shells with the mixture. Place in a large saucepan, filling the gaps with left over mixture. cover with water (I usually add a splash of wine) and cook over low heat for approx. 3 hours. Make sure that the saucepan has a tight lid.

In our house, this dish is served with potato crisps - use them to scoop up the food.

Sorry, I realize now, I may have been a little 'lean' on the amount of ground beef. Add at least another 1/2lb.
