Ingredients
375g packet fresh tortellini (beef, veal or any cheese filling)
4 cups beef stock
½ cup sliced shallots (spring onions or scallions)
1 red chilli, seeded and sliced
Serves 4
Cook tortellini in large pot of boiling water for about 8 minutes, or until al dente. Drain and divide into 4 soup bowls.
Meanwhile, while the pasta is cooking, bring the beef stock to boil in another saucepan. Add shallots and chilli, simmer for 3 minutes.
Ladle broth over tortellini and let sit for a few more minutes. Serve sprinkled with cracked pepper, extra shallots or fresh coriander.
