Tortellini Broth

Ingredients

  • 375g packet fresh tortellini (beef, veal or any cheese filling)
  • 4 cups beef stock
  • ½ cup sliced shallots (spring onions or scallions)
  • 1 red chilli, seeded and sliced

Serves 4

  1. Cook tortellini in large pot of boiling water for about 8 minutes, or until al dente. Drain and divide into 4 soup bowls.
  2. Meanwhile, while the pasta is cooking, bring the beef stock to boil in another saucepan. Add shallots and chilli, simmer for 3 minutes.
  3. Ladle broth over tortellini and let sit for a few more minutes. Serve sprinkled with cracked pepper, extra shallots or fresh coriander.
