Ingredients
2 cups (650g) sweet potato or kumara, cooked and mashed
2 tbsp Thai red curry paste
½ cup coriander, chopped
415g can or tinned pink salmon, drained
1 tbsp coconut or vegetable oil
Serves 4
Combine mashed sweet potato, salmon, red curry paste and coriander in a large bowl, season with pepper.
Shape into round patties.
Heat oil in frying pan over medium heat and cook patties for about 4 minutes on either side until golden brown.
Serve with Thai sweet chill sauce, accompanied by steamed jasmine rice with cucumber or green salad.
