In a large pot with a lid, boil the water. Add salt, pepper and oatmeal. Cover and let cook for two hours, stirring often.
Add the meat, onion and bay leaves, mix well. Cook for another hour, stirring often.
Remove bay leaf (leaves). Pour into bread pans- size of pan does not matter. Refrigerate overnight.
To serve: Slice the goetta and fry it until crispy or just until heated through. Goetta may be served with pancakes and eggs, on sandwiches, or in place of meat at dinner.
Makes about 24 servings.

*Two teaspoons of Savory may be substituted for the onion and bayleaf.
This can also be made ahead of time and frozen from the chilled state.
I would also follow the oats' package for how long to cook it, smaller portions will not take nearly as long.
While close, this isn't exactly how my Auntie Lena made Goetta (said "Getta" witha short or soft E sound). She would use spiced pork or lamb (only 1 ground meat) and cook the oatmeal 'thick'. It was never chilled, but immediately fried. This left it loose like porridge - delish!
